Butter Scotch Pie INGREDIENTS
  • 1 c. butterscotch chips
  • 1 c. undiluted evaporated milk
  • 2 cans canned pumpkin
  • 1/2 c. sugar
  • 1 tbsp. flour
  • 1/2 tsp. salt
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ground cloves
  • 3 eggs, slightly beaten
  • 1 unbaked 9-inch pie shell
Butter Scotch Pie INSTRUCTIONS :
Combine butterscotch pieces and evaporated milk in top of double boiler; heat over hot water until pieces are melted. Remove from heat. Blend in pumpkin.

Combine sugar, flour, salt, ginger, cinnamon, nutmeg and cloves. Blend sugar mixture and eggs into butterscotch and pumpkin mixture. Pour into unbaked pie shell. Bake at 400 degrees for 50 minutes or until knife inserted near edge comes out clean...enjoy it !

  • 2 c. butterscotch chips
  • 1 c. dark Karo syrup
  • 4 eggs
  • 1/2 tsp. salt
  • 1 c. pecan halves
  • 9 inch unbaked pie shell
Butter Scotch Pie INSTRUCTIONS Preheat oven to 350 degrees. Melt butterscotch chips over very low flame; set aside. In a large bowl, combine Karo corn syrup, eggs, and salt; beat well. Gradually blend in melted butterscotch. Beat until smooth. Stir in pecans. Pour into unbaked pie shell. Bake 50 minutes...and the Butter Scotch Pie is ready to serve..warm ! Nice and delicious !

BUTTER SCOTCH INGREDIENTS
  • 1 prebaked 10 inch pastry shell or flaky pastry for 10 inch pie
BUTTERSCOTCH FILLING:
  • 1 1/2 c. brown sugar, light
  • 2/3 c. cornstarch
  • 1/2 tsp. salt
  • 4 c. milk
  • 6 slightly beaten egg yolks (separated, save egg whites)
  • 6 tbsp. butter
  • 2 tsp. vanilla extract
BUTTER SCOTCH INSTRUCTIONS
In saucepan, combine sugar, cornstarch and salt; gradually stir in milk. Cook and stir over medium heat until bubbly. Cook and stir 2 minutes. Remove from heat.

Stir small amount of hot mixture into slightly beaten egg yolks; immediately return to hot mixture; cook additional 2 minutes, stirring constantly. Remove from heat. Add butter and vanilla. Pour into cooled pie shell. Spread meringue on top of pie and bake at 350 degrees for 12-15 minutes. Cool before serving.

MERINGUE:
  • 6 egg whites, separated
  • 1 tsp. vanilla extract
  • 1/2 tsp. cream of tartar
  • 12 tbsp. granulated sugar
INSTRUCTIONS
Beat egg whites with vanilla and cream of tartar until soft peaks form. Beat on high speed of electric mixer. Gradually add granulated sugar, beating until stiff and glossy peaks form and all sugar is dissolved. Spread meringue over hot butterscotch filling, sealing to edge of pastry shell. Bake at 350 for 12- 15 minutes or until meringue is golden brown. The butter scotch pie recipe is ready to serve...enjoy it warm !

Unbaked pie pastry
  • 4-6 c. pared, sliced crisp apples
  • 1 1/2 tsp. lemon juice
  • 1/2 - 3/4 c. sugar
  • 1/4 c. flour
  • 1 tsp. cinnamon
  • 1/8 tsp. salt
  • 6 oz. butterscotch chips
  • 1/4 c. butter
  • 3/4 c. flour
  • 1/8 tsp. salt
Butterscotch Pie INSTRUCTIONS
Line 9 1/2 inch pie plate with pastry. Toss apples, lemon juice, sugar, 1/4 cup flour, cinnamon and salt together. Spoon into pie crust. Cover edge of pie crust with aluminum foil to prevent over browning. Bake at 375 degrees for 20 minutes.

While baking - prepare crumbs. Melt butter and butterscotch chips in double boiler or microwave. Add 3/4 cup flour and 1/8 teaspoon salt with a fork until uniformly crumbly.

Remove foil form pie, spread crumbs over top. Return pie to oven and bake additional 25 minutes or until bubbly. The butter scotch pie is ready..enjoy it !

  • 4 cups thawed frozen whipped topping, from 12 oz container
  • 1 tbsp butterscotch sundae syrup, like Smuckers
  • 2 cups of milk
  • 1 large banana
  • 1 (3.9 oz pkg) sugar-free instant chocolate pudding mix
  • 1 (6 oz pkg) prepared graham cracker pie crust
  • 1 (3.4 oz pkg) sugar-free instant butterscotch pudding mix

Butterscotch Pie INSTRUCTIONS In a large bowl, whisk together 1 cup milk and chocolate pudding mix until smooth. Slice bananas thinly, spread evenly onto bottom of graham cracker crust. Spread chocolate pudding mix over bananas.

In another bowl, whisk together butterscotch pudding mix and remaining milk until smooth. Fold in 1 cup whipped topping, spread over chocolate layer. Spread remaining whipped topping over pie.

Boil all together and put into baked pie shells. It's best to use a double boiler, if available to avoid scorching the milk on the bottom of the pan. Refrigerate for 2 hours before serving. The butterscotch pie is ready...nice ! Enjoy it !

INGREDIENTS
  • 1 cup brown sugar (not packed)
  • 2 tbsp. flour
  • 2 tbsp. butter
  • 1 tsp. vanilla
  • 1 cup cold water
  • 2 egg yolks (slightly beaten)
  • prebaked pie crust

INSTRUCTIONS
This recipe is from a region of Germany that borders Holland. This same recipe may be used (without the pie crust) to make butterscotch pudding!

Combine sugar and flour in the top of a double boiler. Add remaining ingredients in order given, adding the water and eggs last. Mix the egg yolks with 2 teaspoons of water before adding. Cook until mixture has thickened and coats the back of a spoon.

Pour the mixture into a prebaked 9-inch pie crust.

Meringue Topping:

Beat 3 egg whites until stiff. While beating, gradually add 6 tablespoons of white sugar, 2 tablespoons at a time. Beat well after each addition. Add 1 teaspoon of pure vanilla.

Spread the meringue evenly over the top of the pie, all the way to the edges. If you don't spread it to the crusts to seal, the meringue may weep and shrink.

Put the pie in a preheated 375°F oven until the meringue has browned lightly. The butterscotch pie recipe is ready to serve....enjoy it !
